Seeing you are using large paver stones it is fine to just use crushed stone. You can level pavers on crushed stone easily. It would take a bit more prep time dressing the top with screening and compacting for pavers but time will be saved when putting pavers down. It wouldn't really be that much of a differance either way. Time or material.
